The study, presented at the 35th General Meeting of the Japanese Society for Mastication Science, showed that emulsified condiments help clump food together, making it smoother and easier to swallow. This finding is particularly beneficial for those with declining eating abilities due to age, potentially helping to prevent issues like malnutrition and aspiration pneumonia. Kewpie plans further research on this topic.
