Which peppers are used for processed pepper powder?

Pepper powder, indeed one of the world’s bigger mysteries. A viewer of a Dutch television program called Keuringsdienst van Waarde, wondered why ground paprika doesn’t actually taste like paprika? Do they use a special kind? Or does processing alter the flavour in some way? And when you think about it, why is ground paprika always red and never green?



To answer these and other questions, the TV show hits the road and ends up in a Babylonian confusion about paprika, pepper and capsicum. Pepper grower Theo Jansen shows his greenhouse. Chef cook Alain Caron grinds his own paprika. Your Hungarian goulash will never taste the same again.
