In 2025, Spanish aubergine had its biggest price gap in a decade

In 2025, aubergine prices from origin to destination saw the largest increase over the past decade, rising by 119.7% from what growers received to the amount paid in wholesale markets (Mercas). This data comes from Hortoinfo's report, which relies on information from the Price and Market Observatory of the Andalusian Regional Government (Junta de Andalucía).

Producers were paid an average of 0.71 €/kg for aubergines across all categories and types, excluding VAT. At Mercas, the same product was sold at an average price of 1.56 €/kg, reflecting the previously mentioned commercial margin.

In 2024, the price gap between origin and wholesale markets was 87.69%, with an average of 0.65 €/kg at the farm and 1.22 €/kg at destination. In 2023, this gap was 101.6%, with producers earning 0.61 €/kg and wholesale market prices at 1.23 €/kg.

The lowest price gap in the past decade (60.87%) was recorded in 2017, when growers received 0.42 €/kg, and Mercas sold aubergines at 1.11 €/kg.
