Wasabi grower Sander supplies 'Restaurant of the Future'

What will be on our plates in the future? That question is addressed by the TV program 'Restaurant of the Future.' In it, the focus is on making the food chain more sustainable. Sander van Kampen of Dutch Wasabi contributes to this as a grower of a special ingredient. This is because his wasabi does not come from an exotic location but rather from a Dutch greenhouse.

In 2018, Sander entered the market with wasabi from the greenhouse for the first time, but in 2022, he had "somewhat larger volumes" for the first time, he said at the time.

Wasabi is a challenging plant to grow, he told presenter Anna Gimbrère on TV. She came to see the greenhouse and took a whole plant with her to cook with. Watch the TV item here (from minute 22.20).
