Revolution Farms, a lettuce farm in Michigan, expanded its greenhouse two acres by two acres in June 2021.
Tam Serage, head grower, said the upgrade would allow the farm to triple its lettuce production, reaching up to 1.5 million pounds a year.
The most unique part? The greenhouse implemented new technology that prevented the lettuce from ever touching human hands, from seed to packaging.
"Our seeding, planting, and harvesting are all done by machine so there's less human contact, less chance of any food safety incidents," Serage said.
