The Cornucopia, near Sioux Center, Iowa, has really grown since it was last featured in "Proud to be a Hometown Farmer" in 2014. Owner John Wesselius says the amount of vegetables the farm grows has tripled since then.
"We enjoy growing. We enjoy growing food, we enjoy growing relationships and we enjoy growing business," said John.
Even this time of year, you'll see small fields of green and plants that look like tiny forests. You'll feel temperatures you can only dream of this time of year. "This is the most exciting time of the year in a lot of ways," said co-owner Janna Wesselius, John's wife.
Even during a brutally cold February, plants are going in the soil. Full time workers at The Cornucopia are already transferring small celery seedlings. But planting took off in January. That's when John and Janna started growing their own onions from seed - a first this year.
The pair plans to grow 56,000 onions, up from the 26,000 grown last year. You can find onions residing in a new greenhouse, just built for the '21 growing season. "This gives us twice the capacity we had last year," said John.
