Munich gastronomy supplier Hermann Fischer KG celebrates its 50th anniversary

"Greatest growth potential in hospitality"

Hermann Fischer KG celebrates its 50th anniversary in 2019. Company founder Hermann Fischer was one of the first dealers on the Munich wholesale market in 1969, specializing in gastronomy. He supplied the city's inns, restaurants and hotels with fresh fruits and vegetables from selected growers and suppliers. Today, the core business is still the same, but the operating capacity, product range and clientele have grown significantly, says Fabian Fritzmaier.


Johannes, Fabian and Silvia Fritzmaier are running the family business based in the Munich Grossmarkthalle.

Convenience & Regionality
The product range of the family business has always been very broad. In the catering industry you have to be able to offer everything -cut goods, imported fruit or delicatessen- notes the young manager. "Of course it always depends on the division. In hotels, convenience products are slightly more accepted. In general, more and more value is placed on the quality in the gastronomy; the price is secondary. What is becoming more and more of an issue is regionalism, especially now in the summer."

The lion's share of the products is sourced either domestically or via direct imports (i.a. from the Netherlands, Spain and Italy).

For about five years, the Hermann Fischer KG is also certified organic. However, no great growth in this segment has been felt so far, commented Fritzmaier. "Of course there are institutions and customers who want to switch to bio."

At night, activity at the Munich market area is at a peak.

Gradual expansion of capacity
The belly of the city - as the nickname of the wholesale market is - is still the location of the company. The family of traders is not worried about today's negotiations on the future and rebuilding of the site. "The wholesale market is our home; where and in what form, does not matter. Site capacity has grown fourfold compared to 20 years ago."

The family business has been in Munich for 50 years now.

This is mainly due to the expanded clientele: about 95 percent of today's customers are deliveries. The company fleet was expanded accordingly, from 4 to 15 vehicles within 10 years. At the end, the young specialist dealer sees great growth potential, especially in the hotel industry. "The larger hotels are sure to see the most growth."
