Italian tomato flour wins an award

"At SIAL Innovation Canada 2025 - one of the most prestigious international trade fairs dedicated to food innovation - we were awarded for a special tomato flour that we made by recovering and processing the skins of the tomatoes used to make our 'A Sarsa da Nunna' sauce - a homage to the cuisine of our grandmothers in Calabria," reports Ferdinando Muraca, owner and marketing director of the Sapori Antichi-Gruppo Muraca family business, led by his father Giacomo Muraca and brothers Antonio and Ivan Muraca.

In the 1990s, Giacomo Muraca decided to transform and package typical Calabrian delicacies, especially products based on local chestnuts, vegetables, spices, and herbs. The company - a concrete example of how small family businesses can make a name for themselves on the international scene thanks to their ability to innovate while maintaining local traditions alive - currently produces, processes and markets a wide range of products including: tomato puree, ready-made sauces, peeled tomatoes, bell pepper sauce, bruschetta sauces, pickles, grilled vegetables, jams, mushrooms, spices and herbs, fresh, dried and baked chestnuts, local chestnut flour and various by-products. All the products are processed in the 400 sq m laboratory, equipped with two lines for both organic and traditional products.

"As producers and processors of chestnuts, we have overcome the crisis that has hit chestnut-growing areas almost all over Italy. Our artisanal San Marzano type long tomato puree was the way out after the advent of the gall wasp, a parasite that mowed down entire chestnut productions. Although we are historical producers of natural tomato sauce without colouring or preservatives, the real breakthrough came when we changed the bottle to a beer-type one. We produce about 1.5 million 720 ml and 440 ml bottles of plain sauce and ready-made sauces processed with chilli, Tropea onions, cherry tomatoes, red and yellow dates.

The flagship product is the organic tomato puree, which we market under the brand name "A Sarsa da Nunna". It is highly appreciated by consumers and is obtained by processing fresh local tomatoes artisanally without the addition of concentrate. To enhance the taste of the sauce, harvesting follows the natural ripening of the fruit. Little time passes between harvesting and processing, with an intermediate phase of manual selection of the best tomatoes that will become either sauce or peeled tomatoes.
