US: Fulfilling a dream through lettuce

It's the dream of every hobby gardener to be able to raise plans year-round. That's what they do at Salad Days in Flora. They supply different varieties of lettuce to restaurants and produce markets.

The husband-wife team of Leigh Bailey and Jamie Redmond had already had a successful career in real estate back in 2013 when they decided to do something different. They landed in a 21,000-square-foot greenhouse with lettuce plants that hey grow indoors year-round.

The plants are grown hydroponically, which means they're not planted in soil but in troughs with nutrient-rich water flows around their roots. The temperature is maintained by either using heat or evaporative cooling. The air around the growing zone is constantly moving and is kept at just the right temperature.

Salad Farms have distributed their products as far away as Nashville and Houston. The demand is so high right now that most of it stays in Central Mississippi, as well as New Orleans and the Gulf Coast.
