Domestic lamb's lettuce cultivation is declining, imports are increasing

In Switzerland, around 3,500 metric tons of lamb's lettuce are grown on just over 450 hectares, a good 40 per cent of lamb's lettuce is grown in greenhouses, and around 16 per cent of domestic production is produced organically. Lamb's lettuce is an important crop for vegetable producers: in 2023, it was the top-selling salad variety, with a turnover of around CHF 61 million (USD 67.6 million).

After a record harvest of almost 5,300 metric tons in 2014, both the harvest volumes and the local acreage have declined – although imports have increased slightly. However, the vast majority of lamb's lettuce that ends up on Swiss plates still comes from Swiss cultivation.
