Machine manufacturer Schomaker Convenience Technik tackles fruit and vegetable industry:

"In the end, it doesn't make much difference if you process meat or vegetables"

Fruit and vegetables are becoming increasingly important in people's diets. The health trend among young people is causing consumption to rise, but climate change also plays a role, as fruit and vegetables are more energy-efficient than meat. This development is also evident among machine manufacturers who want to conquer this new market for themselves.

Schomaker Convenience Technik LLC was actually specialised in machines for meat processing, but this year it will be present at Fruit Logistica for the first time. Ricarda Schomaker explains: "We can see that vegetables and, accordingly, vegetable processing are becoming increasingly important. Solutions for vegan products, organic and vegetable production plants currently already account for 65% of our company's machine sales. Nevertheless, we still see great potential for our solutions for fruit and vegetables."

In fact, he says, no major changes need to be made to their machines: "In the end, it doesn't make much difference whether you process meat or vegetables. There are minor adjustments and they can be implemented quickly." At the fair in February, the focus will be on the company's continuous deep fryers and continuous cooking and cooking systems.

The special feature of the company's machines is the efficient use of energy: "The continuous circulation of the frying oil reduces the thermal load. In addition, we save 35% frying oil compared to conventional deep fat fryers."

The continuous deep fryer type SFE-E will cook between 100 and 200 kilograms of product per hour, says Schomaker. "They are also suitable for generating food intended for direct consumption in refectories and canteens." The cooking time is infinitely variable and can be adjusted according to any product requirements. This is what makes them so versatile, explains Schomaker: "Some examples of dishes processed by our machines are mushrooms in beer batter, vegetable roasts, potato and pepper products, okra vegetable rolls, but also apple rings or pineapple in batter. There are no limits to the possibilities, however."
