US (WI): Selling microgreens at the farmers market

That microgreens are not only a niche product for fancy chefs is what Bear Creek Organic Farm is proving. “We never heard of microgreens when we started the farm, but we wanted to start plants earlier in this greenhouse.” A visit to the farmers market gave Brian Bates of Bear Creek Organic Farm the idea to grow. They started small by bringing 2 flats of buckwheat to the market to get people to try, and now they seed 600 flats a week in the summer and 75 percent of their sales go to individual customers.
