US (FL): Scientist tries to return flavor to the tomato

Dr. Harry J. Klee is on a mission to breathe new life into the fruit. In his lab, he and his team are trying to create the perfect hybrid among all the varietals.

Based on a study conducted on a panel of Americans, the researchers were able to establish the characteristics needed to make the perfect tomato.

The results showed that a person's cultural heritage and past experience influence their perception of taste: the first time they tasted the fruit, the tomatoes they ate as a child, and lots of other factors that form each person's preferences.

It's basically like applying Freudian theory to tomatoes. But despite the complexity of taste, Klee asserts: "We came up with something that everyone would agree is a really good tomato."

The research team then used 140 different varieties to carry out chemical analyses so they could develop a sort of instruction manual for the ideal tomato.
