“Vegetable spaghetti is now a consumer product”

The French company Frais Emincés has been commercialising fresh cut vegetables for about twenty years. Recently the company broadened its product range by offering vegetable spaghetti. The different spaghetti are made of sweet potato, zucchini, butternut squash and carrot. Marc Pajotin, Frais Émincés: “The four varieties are equally popular. Our costumers are curious about the new products and want to try them all.” 



“The vegetable spaghetti seems to be a real hit with retail shoppers, since the demand from supermarkets is much higher than the demand from restaurants, although restaurants demand the product as well. Consumers mix the vegetable spaghetti with traditional pasta or use it as an alternative to make themselves a healthy meal.” 

The vegetables that are used for the spaghetti are not necessarily of an inferior quality. “Vegetables need to have a good firmness and taste to make them suitable for the production of vegetable spaghetti.” The zucchini spaghetti is easier to produce than the other varieties. “The carrot spaghetti is most complicated to produce because of the small diameter of carrots.” 

Apart from vegetable spaghetti, Frais Emincés offers a broad range of fresh cut vegetables and fruits such as onions, mushrooms, apples and vegetable tagliatelle.
