Cora Seeds over tomato flavour

"Stop complaining, start explaining!"

Thinking that genetic research and varietal renewal concerning table tomatoes only has the objective of extending produce shelf-life and making fruits more resistant to the main biological or environmental issues, would be a mistake. "Many complain that tomatoes are now less flavourful, but maybe the entire category should be looked at differently. As supply is increasingly segmented, maybe it could be useful to better illustrate how the different tomatoes should be used by final consumers", the team of Cora Seeds states.

At Macfrut 2018, Cora Seeds organised a tasting session for the main tomato producers and retailers. Sales manager Angelo Crucitti explains that "a lot of people talk about high-quality tomatoes, but it doesn't only mean Brix levels, it mainly means good flavours."



With the help of Chef Leonardo, the company set up a few tables and created a few recipes using the Regale F1, Vivace F1 and Grazioso F1 varieties. The former, a Cora Seeds midi-plum, was used peeled. It's a versatile variety suitable for all uses. It's very firm and crunchy, with an appealing colour and a long-shelf file.

"Regale can also be used uncooked, thanks to the fact that it's crunchy. There is no stem and the flesh is very thick. The average Brix level is 6°."



Vivace F1 has a good sugar content, so it doesn't need sugar when cooked to counter the acidity. It can be cooked for long and there's no need to peel it first. As it's not very watery, it can be used to make bruschettas.

As for Grazioso, "it's suitable for sauteing, thanks to the short cooking time."
